Vinegar Brewery SHOUBUNSU

 

Since its establishment in 1711, Vinegar Brewery SHOUBUNSU has been manufacturing and selling static-fermented vinegar products in Okawa City, Fukuoka Prefecture for generations. Cloudy vinegar (unfiltered vinegar) containing acetic bacteria indigenous to the brewery and organic brown rice vinegar demonstrate rich and mellow acidic flavour.

Rich amino acids and organic acids contribute to the deep flavour of our organic brown rice vinegar. We add the ingredients and let them brew and mature in earthen pots by traditional static fermentation twice a year (around spring and autumn equinox periods).

A pure rice vinegar concentrate using only honey and yuzu citrus juice; the vinegar used is produced from domestically grown rice. Dilute it with ice-cold water (still or sparkling) at 1:3 / 1:4 ratio. You can also enjoy it hot during winter.
